Am Alive and Still Cooking! Pizza! Pizza! With Bay Leaves and Ginger? Yes indeed.

I hope 2016 is unfolding well.  I have been cooking and creating some new dishes.

Here is one.

Chicken Pizza with Ranch Dressing, Sauteed Veggies with Bay Leaves and Ginger

I love making pizzas with a white sauce and perhaps cutting some tomato paste into it.

Today I started with just Litehouse Greek Yogurt Ranch Dressing as my sauce to spread on the pizza crust.

Bone-in Skinless Chicken Breasts were cooked in water to simmer.  For 25 minutes.

Rosemary, Garlic and Salt to season.  Ginger and Strawberry Balsamic vinaigrette.

Twist for this recipe?  Adding Bay Leaves to the pan as the chicken cooked.  I added 2 leaves.

Remove Chicken Breasts and cook chopped onions and mushrooms in remaining sauce until liquid almost gone.

Used -- 1/4 of large Spanish Onion and 5 Mushrooms.


Preparation:

14 inch pizza shell

Spread Litehouse Greek Yogurt Ranch Dressing on Crust.  Used about 3 Tablespoons.

Sauteed Veggies.

Chopped Chicken from 1 Large Chicken Breast

Sprinkle Dried Garlic

Grated Parmesan

5 Slices of provolone

Cooked in 400 degree oven until golden brown.  Let rest for about 5 minutes before slicing and serving.

Result was an unexpected taste.  Very good.  But not as sharp as I was expecting as the Litehouse Greek Yogurt Ranch Dressing and the sauteed veggies were sharp tasting.  But the cheese swallowed up the sharp taste.

Very tasty.  Will do this again.
